Baked Peach Dumplings
2 cups flour
1/2 tsp salt
1 1/2 tsp baking powder
1/3 cup shortening or butter
2/3 cup milk
3 fresh peaches
2 tbsp sugar
Cinnamon
Butter
Sift or stir together flour, salt, and baking powder. Cut in the butter or shortening and stir in the milk. Roll dough on floured surface and cut into circles, about 6 inches in diameter. You should be able to get 6 circles.
Peal 3 fresh peaches and place a peach half on each circle of dough. On each peach place 1 tsp sugar, a dash of cinnamon, and a small piece of butter. Fold the dough over the peach, pinching the dough together a little. Pour the following sauce around the dumplings:
2 cups sugar
2 cups boiling water
1/2 cup butter
1/4 teaspoon almond flavoring
Combine all ingredients and boil in a saucepan for 2 to 3 minutes. Place the dumplings in a baking dish and pour the sauce around the dumplings. Bake at 350 for 1 hour.
